Under the build section of Platforms > Android, only tick:
Support OpenGL ES3.1
Launch using the project launcher, go into advanced settings and launch by the book. It should work.
Basically what’s happening here is that the Oculus Quest has some incompatibility with the default rendering support ArmV7 and OpenGL ES2.
You could find more information on the Oculus Developer Blog.
Unticking those and ticking Arm64 and OpenGL ES3.1 should fix this problem
